Fine-grained meat obtained from Alentejo breed pigs, slaughtered between 12 and 20 months, whose main distinctive feature is the black skin. This meat has considerable importance in Ourique council. Suckling pigs are nourished by mother milk during, approximately, 45 days. In the following rearing period, the nourishment is based on cereals. In the mountain period, the animals pasture in open air, eating grass and acorn. This meat is the basis of regional sausage-making.
