In the Algarve, typically, the fava beans are first boiled with mint (or a little coriander and mint) and then cooked with morcela, bacon and chouriço, fried in the meantime with their fat. The ideal accompaniment is a salad of lettuce, but in some places they go along with fried mackerel.
