Typical dish of the Ribatejo region, as the local cuisine is dominated by the coastal way of life. Tagus and its tributaries supplied the fish that brought fame to the "Allis shad açorda" and other regional dishes as the "mullet on the tile" or "Fragateiro style bouillabaisse". Today these fishes are seldom found in the waters of the Tagus, but the ways of cooking them still remain. The "allis-shad açorda" usually goes along with fried shad (which head, tail and roe are used in this specialty). The few variants do not bring much change to this recipe.
