Different from the Continental black puddings, the Azores black puddings are prepared with the same base of pig's blood and a stew, and then seasoned with chilli and various spices, including cinnamon, fennel, black pepper, cloves and nutmeg. Once made, this type of sausage remains in the smokehouse for four to eight days. Traditionally, they are fried and served with fried egg and chips, or just cooked with yams. More recently, it has been appreciated with fresh pineapple.
