The origins of Azeitão cheese date back to the first half of the nineteenth century, a time when a farmer attempted to recreate in Azeitão, the production of cheese from his native province, Beira Baixa. With some surprise, the results were very different than expected, but it was from there that the current manufacturing technique developed and this is now a most popular cheese. Produced in the municipalities of Palmela, Sesimbra and Setúbal, is a cured buttery and semi-soft cheese, white or slightly yellowish, obtained by slow draining the curd after coagulation of ewe's raw milk, in glazed clay pots, by an infusion of thistle. Then the cheeses go through a phase of "draining" or "bleeding" for 20 days. They have the shape of a low cylinder, without clearly defined edges and are presentaed in two diameters: 5-7 cm and 8-11 cm. The weight can vary between 100 and 250 grams. Its distinctive flavor and taste is slightly spicy, a mix of sour and salty.
