In central and south Portugal, they are called "pastéis", but in the north, they are better known as cod fried cakes. The basis of preparation is the same but there are local variations of the recipe. Although their origin is linked to Minho, where they were always present as a pilgrims' snack on festivals, these codfish cakes are a typical dish of the national cuisine that can also be served as starters or as a main dish with tomato rice or a salad of kidney beans.
