Early references to the production of cream cheese in Beira Baixa date from the late nineteenth century, upholding the honored tradition of this product in the region. The term Travia applied when the sale was made the liter, in containers called "ferrados", given the fluidity characteristics of this type of cheese. The Travia of Beira Baixa presents as a mass of soft consistency, poorly mixed, granular and white. It results from the precipitation or coagulation by heat, of the proteins contained in the serum resulting from the manufacture of Beira Baixa cheese. Given their more or less pasty consistency, it has no particular shape, assuming the container that contains it. It has a sweet lactic flavor and a nice "bouquet", melting easily in the mouth.
