From the many chicken recipes in Algrave, this is the one standing out. After slowly cooked with sausage, bacon, onion and a sprig of parsley, the chicken will brown in a soft stew, being sprinkled with white wine halfway through cooking. In other versions, it is browned in olive oil with garlic and chilli or scrub with a paste of lard, paprika, garlic, onion and white wine, and is then baked in the oven.
