Carcasses of kids of the Charnequeira Breed, Breed Serrana, or their crosses, slaughtered when 40 and 45 days of life, with live weight below 15 kg, reared in the traditional manner. These animals are the result of an operating system of the goat breed based on extensive grazing. The kids are raised on the plains of Beira Interior, where the pastures are composed of spontaneous Gramineae and Fabaceae. In the periods of greatest food shortages, the shrub flora is also an important foraging resource. The Serrana breed is a breed identified and individualized since long, its origin, however, is difficult to determine. The race Charnequeira, according to a widespread opinion, is also a breed perfectly defined.
