Successors of Muslim "harisa", "migas" are an ancient way to take advantage of hard bread. Simple, with cockles, bacon, or with fried fish from the river, it becomes a complete meal. Formerly the shepherds had them for breakfast, today they are often used as a starter. With cockles, finely ground corn flour, a little fried bacon and lard are made the famous Algarve maize porridge, known here by "xerém", a name that recalls, once again, the Arab presence. They can also be prepared with clams, with small sardines, boiled or stewed with onion, tomato, parsley and olive oil, or only with bacon and sausage, then being called "xerém com torresmos". If cooked in the broth in which the black pudding was scalded, they are called Moorish porridge, "Papas mouras".
