The Elvas Plum has three forms. As fresh plums, they are a rounded shaped fruit, a little flattered at the poles, of a green color, which may have pink and yellow shades. The flesh is very juicy and has a distinctive flavour. The lump is small standing out easily from the pulp. The dried plums, with no more than 30% humidity, have a dark brown, stone, no cracks in the epidermis, of medium or hard consistency, with thickening of the pulp and skin, slightly acid, with at least 67% of total sugars and no trace of the stalk. And as a candy - the whole fruit candied by melted sugar, of a greenish or white colour and covered with sugar.
From the historical perspective the Elvas Plum, known in the region as 'abrunho', has originated in France. Initially, it was grown just in small backyards of residencial houses. Its expansion and culture in orchards takes place at the beginning of the twentieth century, with selected plants from well-adapted varieties, which due to their good reputation became especially appreciated in England. The industry of the candied plum had its beginnings in 1834, with José Guerra, having been awarded thereafter 203 national and international prizes. The Elvas Plum usually garnishes the "sericaia", a most typical sweet dish of the Alentejo region.
