José Luis Gomes de Sá Jr. was a merchant of cod in Porto when, in the late nineteenth century, decided to reinvent the cod fritters, turning them into the dish that inherited his name. It is said that giving this new recipe to a friend who owned the restaurant that made it popular, he would have commented: "if you change any thing, it will no longer be good." The piece of advice was accepted: the merchant's recipe has achieved fame and popularity nationwide.
