Air dried ham obtained exclusively from the hind legs of pigs of the Alentejana breed, raised in the mountain open spaces. It has a long, elongated shape, beak trimmed and with a minimum weight of 5 kg. By their method of production, the ham of Barrancos is more similar to the Andalusian and Extremaduran hams than to other Portuguese hams. This is due to the fact that the Alentejo town of Barrancos is located very near the border with Spain, and the Spanish presence and influence have always been quite remarkable in the region. As evidences of this, in Barrancos there is still a local dialect, the killing of the bull in the "Corridas", and the ham.
