Carcasses of lambs of indigenous breeds Merina and Campaniça and of their crosses with other breeds of the Merino trunk, slaughtered at 3-4 months old, weighing between 8 and 13 kg, reared in the traditional manner. Their feeding is based on breast milk and spontaneous or improved pastures. In autumn, the diet is supplemented with acorn. In summer, as the pastures are scarce, are used stubble or straw from cereal crops. The calving generally occurs during two periods: July to September and December to February. After slaughter, the meat is cooled and maintained at a temperature below 7 º C, for the carcasse, and 3 C, for the viscera. The origins of sheep production in the Alentejo are longstanding. Note that it is from the milk of race Campaniça that ithe Serpa cheese is produced. The Merino Branco breed, in turn, is predominant in the Alentejo. Initially used for wool production of excellent quality, it has been converted to the more profitable production of meat.
