Carcasses of lambs from Regional Merino Branco indigenous breed and its crosses, slaughtered between 3 and 4 months old, weighing between 8 and 14 kg, reared in the traditional manner. These animals are raised on farms in the area, which has soil and climatic characteristics of the Mediterranean, with hot and dry summers. The basis of their diet are natural pastures, making the acorn and the stubble of wheat an important complement to the diet. The origin of this breed is the same as of other merinos in the Iberian peninsula and has always been considered of excellent quality for wool production. The lamb is of fundamental importance to the economy of the Alentejo.
