Smoked sausage composed of pieces of meat and fat pork of Alentejo breed, to which are added garlic, ground pepper, salt and water. The casing is natural dry gut of beef or pork, and is shaped like a horseshoe, with a length of 30 cm and a diameter between 20 and 30 mm. The mass is heterogeneous and well mingled together.
