Smoked sausage, made up of scraps of bloody meat, fat and offal of pig of Alentejo breed, in very thin pieces with salt, crushed dried garlic, paprika, pepper and paste of red bell pepper. Sometimes, cumin and white wine of Portalegre can also be added. The casing is a natural gut of cattle. It has a horseshoe shape, tightened by twisting and / or tying the ends with cotton thread, with length up to 30 cm, diameter between 20 and 45 mm and semi-stiff consistency. The excellent quality of sausages in this region is due to traditional manufacturing processes, quality of raw material and especially to the soil and climate of the S. Mamede mountain.
