In ancient times olive cultivation was well established throughout the Mediterranean basin. There is evidence that the Visigoths inherited it from the Romans and the Arabs maintained and developed its cultivation. The first "Rules of the Craft of Olive Oil Maker" dates from 1392 and refers to the city of Evora. In the Middle Ages the oil was the ingredient par excellence and there is a popular saying which states that "the best cook is the one who uses olive oil".
