Produced since the end of the 18th century for family consumption, the traditional recipe of Pico Cheese has been transmitted from one generation to the next, standing out as one of the greatest gastronomic highlights of the island. It is a matured cheese of soft doughy paste in white and yellowish colour. The milk comes from regional milking cows, breed in a free system. This cheese is turn into curd with animal curd. After cutting the curd, moulds are filled according to a traditional technique. The draining process takes one day and the cheese remains for two weeks inside the maturing room. It has a round cylindrical shape, slightly convex on the sides. It is 18cm in diameter and it weighs 700 to 800 grams. The cheese has a characteristic aroma, which is intense and pleasant, as well as a strong salty flavour. It is highly appreciated as dessert or aperitif, served with Pico Verdelho wine.
