Firstly made in Rabaçal town within Coimbra council, this cheese is also produced nowadays in some civil parishes of the councils of Condeixa-a-Nova, Penela, Soure, Alvaiázere, Ansião and Pombal. The traditional producing way has been preserved though. It is a matured cheese with half-hard to hard paste, obtained from the slow exhausting of the curd after draining the mix of sheep and goat milk through handmade animal curd. Following the salting process, this cheese is washed every other day for a few days. Afterwards the maturing begins for a minimum period of 20 days. Rabaçal cheese has a cylindrical shape, a plain crust and a straw yellow colour. It is 10 to 20 cm in diameters, and the weight varies from 300 to 500 grams. It has a smooth clear flavour, which is quite characteristic. It is highly appreciated as starter or dessert.
