Serpa Cheese is the most famous traditional Alentejo cheese, but the technology employed in its production process is the one used in Estrela mountain. It has very particular properties, due to the region’s special conditions. It plays a crutial role in the cultural legacy of Baixo Alentejo region. It is a ripened semi-soft cheese of yellowish white or straw yellow colour that gets darker in contact with the air. The production of this cheese is quite peculiar, since the milk is filtered through wool cloths, folded up to 40 times. It is made of vegetal curd. The curd is cut 4 times with light movemets, presumably influenced by religious traditions. The curing period takes 30 days.
