Smoked sausage, consisting of meat and hard fats obtained from the cutting of carcasses of pigs of the Alentejo breed, salt, sweet pepper, crushed dried garlic, local white wine, cumin, paprika and pepper. For the filling is used natural dry gut of pork and has a horseshoe shape with a length of 30cm and a diameter between 3 and 4.5 cm.
