Smoked sausage, comprising the entire piece of loin of pork of the Alentejo breed, salt, water, sweet pepper paste and dried garlic cloves. It matures for around two days and is then divided into two halves, lengthwise. The halves are superimposed and interspersed with fat to form the Paia.
