Smoked sausage composed of pieces of meat (flank, shoulder, neck and leg) and fat pork of the Alentejo breed, to which are added dry garlic, ground pepper, salt and water. The casing is natural gut of pig, previously dipped in a mixture of water, salt and vinegar and has a cylindrical shape with a length between 15-25 cm and a diameter between 5 and 8 cm. The consistency is semi-stiff, the mass well connected, with irregular distribution of meat and fat.
