In Minho is the sponge cake (not the traditional "folar") the typical cake used for the celebration of Passover. This cake is an essential link in the repetition of an ancient ritual, during which the godfather traditionally offers the sponge cake to his godson. The most popular in the region is undoubtedly the one produced in Margaride. However, those produced in Freitas, Guimarães and Ponte de Lima have achieved a fair fame. Traditionally, this cake is baked in a wood oven in cake moulds of unglazed earthenware.
