Nobody knows the origin of Ovar main specialty but the tradition of making this sponge cake is well known since the late eighteenth century. At the time, the Ovar people who worked in chores in the Tagus, used to take to Lisbon baskets of sponge cake to give to the owners of the frigates. Currently, there are in the town of Ovar several houses where this much appreciated specialty is manufactured and sold. It goes very well along with a fine wine.
