Since times immemorial that milk and goat cheese play an important role in feeding the populations of Trás-os-Montes and the economy of the region. The Goat Cheese of Trás-os-Montes is produced in the districts of Mirandela, Macedo de Cavaleiros, Alfândega da Fé, Carrazeda de Ansiães, Vila Flor, Torre de Moncorvo, Freixo de Espada à Cinta, Mogadouro, Valpaços e Murça. This is a cured cheese, produced with Serrana breed goat milk, extra-hard and whitish with some eyes, after coagulation, with the help of animal curd. Cheeses are washed and dried periodically during the maturation period, that should take a minimum of 60 days. It features a low cylinder regular shape, without defined borders, with a diameter of 12 to 19 cm and a weight between 600 and 900 grammes. It has a strong aroma and the typical flavour of goat cheeses, lightly hot, and it is mainly eaten with rye bread and a good wine, before or after meals.
