From this dish the people of Porto has received the name of "tripeiros". A glory of their traditional cuisine, the origin of this recipe in Porto is remote and linked to a legend from the Age of Discoveries. It is said that the city people answered the call of Infante Dom Henrique, providing boats and filling the wooden barrels with salted meat, keeping nothing for them except the tripes, which they cooked as a thick stew. Currently, sausage and fat meat can also be added, garnished with thick slices of brown bread.
